  • 226 grams Unsalted butter
  • 150 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 280 grams All-purpose flour
  • 100 grams Almond flour
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 300 grams Raspberry jam
  • 30 grams Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x9-inch (23x23 cm) square baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy, about 2-3 minutes. Use a hand mixer or stand mixer for best results.

Mix in the vanilla extract and almond extract until combined.

In a separate bowl, whisk together the all-purpose flour, almond flour, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. The dough will be slightly crumbly but should hold together when pressed.
