Ingredients

  • 250 g Plain flour
  • 125 g Unsalted butter (cold, cubed)
  • 50 g Icing sugar
  • 1 Egg yolk
  • 2 tbsp Ice-cold water
  • 5 Apples (Granny Smith or similar)
  • 75 g Granulated sugar
  • 1 tsp Ground cinnamon
  • 2 tsp Cornstarch
  • 1 tsp Vanilla extract
  • 75 g Rolled oats
  • 50 g Brown sugar
  • 50 g Chilled butter (cubed)
  • 50 g All-purpose flour (for crumble topping)

Directions

Step 1

Prepare the tart crust: In a large mixing bowl, combine plain flour and icing sugar. Add cold, cubed butter and rub it into the flour with your fingertips until the mixture resembles breadcrumbs.

Step 2

Add the egg yolk and ice-cold water to the flour mixture and gently bring it together to form a dough. Do not overwork. Wrap in cling film and refrigerate for 30 minutes.

Step 3

Preheat the oven to 180°C (350°F). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart tin. Carefully line the tin with the dough, pressing it into the edges, and trim off excess. Prick the base with a fork and chill for another 10 minutes.

Step 4

Blind bake the crust: Line the pastry with parchment paper and fill with baking beans or rice. Bake for 15 minutes, then remove the parchment and weights and bake for an additional 5 minutes. Set aside to cool.

Step 5

Prepare the apple filling: Peel, core, and slice the apples thinly. In a large bowl, toss the apples with granulated sugar, ground cinnamon, cornstarch, and vanilla extract.

Step 6

Fill the pre-baked tart shell with the spiced apple mixture, spreading it evenly.

Step 7

Make the crumble topping: In a medium bowl, combine rolled oats, brown sugar, all-purpose flour, and chilled, cubed butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Step 8

Sprinkle the crumble evenly over the apple filling.

Step 9

Bake the tart: Place the tart in the preheated oven and bake for 40-45 minutes, or until the apples are tender and the crumble is golden brown.

Step 10

Let the tart cool slightly before serving. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
