Ingredients

  • 400 g linguini pasta
  • 100 g sun-dried tomatoes (packed in oil)
  • 100 g arugula (rocket)
  • 3 tbsp extra-virgin olive oil
  • 3 pieces garlic cloves
  • 0.5 tsp crushed red pepper flakes
  • 50 g parmesan cheese (optional for serving)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguini and cook until al dente according to the package instructions. Reserve 1 cup of pasta water before draining.

Meanwhile, finely slice the sun-dried tomatoes and peel and finely mince the garlic cloves.

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
