Ingredients

  • 400 grams linguini
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic cloves
  • 200 grams baby spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 0.25 teaspoons ground nutmeg
  • 1 to taste salt
  • 1 to taste black pepper
  • 0.5 cups pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguini and cook until al dente according to the package instructions. Reserve 1/2 cup of pasta cooking water and drain the rest.

Step 2

While the pasta cooks, heat olive oil and butter in a large skillet over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, but do not let the garlic brown.

Add the baby spinach to the skillet. Cook, stirring occasionally, until the spinach is wilted, about 3-4 minutes.
