Ingredients

  • 12 ounces linguini
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 0.5 teaspoons red pepper flakes
  • 0.5 cups dry white wine
  • 1 cup clam juice
  • 2 pounds fresh clams, scrubbed
  • 0 to taste kosher salt
  • 0 to taste black pepper, freshly ground
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 0 to garnish Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to boil. Cook the linguini according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

Step 2

In a large, deep skillet or Dutch oven, heat the olive oil and butter over medium heat until the butter is melted.

Step 3

Add the minced garlic and red pepper flakes to the skillet, stirring constantly for about 1-2 minutes until fragrant. Be careful not to let the garlic burn.

Step 4

Pour in the white wine and clam juice, scraping the bottom of the skillet with a wooden spoon to deglaze. Bring the mixture to a simmer and let it reduce slightly, about 3-4 minutes.

Step 5

Add the fresh clams to the skillet and cover with a lid. Cook for 6-8 minutes, shaking the skillet occasionally, until the clams open. Discard any clams that do not open.

Step 6

Season the sauce with kosher salt and freshly ground black pepper to taste.

Step 7

Add the drained linguini to the skillet, tossing to coat the pasta in the sauce. If the sauce seems too dry, gradually add some reserved pasta water, one tablespoon at a time, until desired consistency is reached.

Step 8

Stir in the chopped parsley and lemon juice, mixing well to combine.

Step 9

Serve the linguini with clam sauce immediately, garnished with more parsley and optional grated Parmesan cheese. Enjoy warm!
