Ingredients

  • 400 g linguini pasta
  • 2 tbsp olive oil
  • 100 g prosciutto
  • 4 pieces garlic cloves
  • 2 tbsp unsalted butter
  • 250 ml heavy cream
  • 100 g parmesan cheese, grated
  • 50 g sun-dried tomatoes, chopped
  • 100 g baby spinach leaves
  • 1 tsp lemon zest
  • 1 tsp salt
  • 0.5 tsp black pepper, freshly ground
  • 2 tbsp fresh basil, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguini pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the prosciutto slices and cook until crispy, about 3-4 minutes. Remove the prosciutto and set it aside on a paper towel-lined plate.

Step 3

Reduce the heat to medium-low and add another tablespoon of olive oil and the butter to the skillet. Stir in the minced garlic and cook for 1-2 minutes, until fragrant but not browned.
