Ingredients

  • 400 grams linguine
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 0.5 teaspoons crushed red pepper flakes
  • 200 grams canned tuna in olive oil, drained
  • 400 grams diced tomatoes (canned or fresh)
  • 2 tablespoons capers, rinsed and drained
  • 2 tablespoons parsley, chopped
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 30 grams parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute, or until fragrant. Add the crushed red pepper flakes and cook for another 30 seconds.

Step 3

Add the drained tuna to the skillet, breaking it into small chunks with a spoon. Cook for about 2 minutes, stirring to combine with the garlic and red pepper flakes.

Step 4

Stir in the diced tomatoes, capers, salt, and black pepper. Let the mixture simmer for 8–10 minutes, allowing the flavors to meld and the sauce to slightly thicken.

Step 5

Add the cooked linguine to the skillet and toss to coat the pasta in the sauce. If the sauce is too thick, use the reserved pasta water to loosen it, adding a little at a time until the desired consistency is achieved.

Step 6

Stir in the chopped parsley and adjust the seasoning with additional salt and pepper, if needed.

Step 7

Serve the linguine hot, garnished with grated parmesan cheese, if desired.
