Ingredients

  • 12 oz Linguine
  • 2 cups Cherry tomatoes, halved
  • 2 medium Zucchini, sliced into half-moons
  • 3 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 0.25 tsp Red pepper flakes (optional)
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Basil leaves, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and optional red pepper flakes to the skillet. Sauté for 1 minute, or until fragrant.

Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to soften and release their juices.

Stir in the zucchini slices and season with salt and black pepper. Cook for an additional 5 minutes until the zucchini becomes tender but not mushy.
