Ingredients

  • 12 ounces linguine
  • 2 tablespoons olive oil
  • 12 ounces Italian sausage (mild or spicy, casings removed)
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large orange bell pepper
  • 3 cloves garlic
  • 0.5 teaspoons red pepper flakes
  • 0.5 cups white wine (or chicken broth)
  • 0.5 cups heavy cream
  • 0.25 cups parmesan cheese (grated)
  • 2 tablespoons fresh parsley (chopped)

  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the linguine and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage, breaking it into small pieces as it cooks, until browned and cooked through, about 5-7 minutes. Transfer the sausage to a plate and set aside.

Step 3

In the same skillet, add the red, yellow, and orange bell peppers. Sauté for 5-6 minutes, stirring occasionally, until the peppers are tender and slightly caramelized.

Step 4

Add the minced garlic and red pepper flakes to the skillet. Cook for 1-2 minutes, stirring frequently, until fragrant.

Add the cooked linguine to the skillet, tossing to coat evenly in the sauce. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.

Step 8

Just before serving, sprinkle the dish with fresh parsley for a bright finish. Serve hot with additional parmesan cheese on the side, if desired.
