Ingredients

  • 400 grams linguine
  • 4 tablespoons olive oil
  • 3 units garlic cloves, thinly sliced
  • 150 grams baby spinach
  • 50 grams slivered almonds, toasted
  • 50 grams breadcrumbs
  • 0.5 teaspoons red chili flakes (optional)
  • 1 teaspoon lemon zest
  • 40 grams Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente.

Step 2

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the bread crumbs to the skillet and toast, stirring frequently, until golden and crispy, about 2-3 minutes. Remove the bread crumbs from the skillet and set aside.

Step 4

In the same skillet, heat the remaining 2 tablespoons of olive oil. Add the sliced garlic and sauté until fragrant, about 1 minute.

Step 5

Stir in the red chili flakes (if using) and baby spinach. Cook until the spinach is wilted, about 2-3 minutes.

Step 6

Drain the linguine, reserving 1/2 cup of pasta water. Add the linguine to the skillet with the spinach mixture. Toss to combine, adding a little reserved pasta water to loosen the sauce if needed.

Step 7

Stir in the toasted almonds, lemon zest, and half of the grated Parmesan cheese. Season with salt and black pepper to taste.

Step 8
