Ingredients

  • 12 oz linguine
  • 1 lb shrimp (peeled and deveined)
  • 4 oz pancetta (diced)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp lemon zest
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add the diced pancetta and cook for 4-5 minutes, stirring occasionally, until crisp. Remove the pancetta with a slotted spoon and set aside on a plate lined with paper towels.

In the same skillet, add the olive oil and 1 tablespoon of butter. Once hot, add the shrimp in a single layer. Season with salt, pepper, and red pepper flakes (if using). Cook for 1-2 minutes per side, or until the shrimp are opaque and pink. Remove the shrimp and set aside.

Stir the pancetta, shrimp, lemon zest, and chopped parsley into the sauce. Add the drained linguine and toss to coat evenly.

Taste and adjust the seasoning with additional salt or pepper, if needed.
