Ingredients

  • 12 oz Linguine pasta
  • 1 cup Ricotta cheese (whole milk)
  • 0.5 cup Parmesan cheese (grated)
  • 2 cloves Garlic (minced)
  • 1 tsp Lemon zest
  • 1 tbsp Fresh lemon juice
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 2 tbsp Fresh basil leaves (chopped)
  • 2 tbsp Fresh parsley (chopped)
  • 1 cup Reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water before draining the pasta.

While the pasta is cooking, prepare the sauce. In a medium mixing bowl, combine the ricotta cheese, Parmesan cheese, lemon zest, lemon juice, salt, and black pepper. Mix until smooth and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
