Ingredients

  • 400 g linguine
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 100 g prosciutto
  • 100 g black olives, pitted and sliced
  • 0.5 tsp red chili flakes
  • 50 g grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Finely chop the garlic cloves and add them to the skillet. Sauté for 1-2 minutes, stirring, until fragrant but not browned.

Step 4

Slice the prosciutto into thin strips and add it to the skillet. Cook for 2-3 minutes, stirring occasionally, until slightly crisp.

Step 5

Add the sliced black olives and red chili flakes to the skillet, stirring to combine. Cook for another minute.

Step 6

Lower the heat to medium-low and toss the drained linguine into the skillet, mixing until the pasta is coated in the sauce. If the mixture is too dry, gradually add some reserved pasta water until the desired consistency is reached.

Step 7

Season with salt and black pepper to taste, keeping in mind that the prosciutto and olives are naturally salty.

Step 8

Sprinkle the grated Parmesan cheese and chopped fresh parsley over the pasta. Toss gently to combine.

Step 9

Serve immediately in warm bowls, garnished with extra Parmesan and parsley if desired.
