Ingredients

  • 12 ounces linguine pasta
  • 6 ounces pancetta, diced
  • 3 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 0.5 teaspoons crushed red pepper flakes
  • 4 cups arugula, roughly chopped
  • 0.5 cups parmesan cheese, grated (for serving)
  • 1 whole lemon, juiced
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 4-5 minutes. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

To the same skillet, add the olive oil, minced garlic, and red pepper flakes. Cook, stirring frequently, until the garlic is fragrant and golden, about 1-2 minutes. Be careful not to burn the garlic.

Step 4

Add the cooked linguine to the skillet along with the reserved pasta water. Toss well to coat the pasta in the garlic-oil mixture.

Step 5

Stir in the crispy pancetta, chopped arugula, and lemon juice. Toss until the arugula is slightly wilted and everything is well combined.

Season to taste with salt and black pepper. Serve immediately, topped with grated parmesan cheese.
