Ingredients

  • 12 oz Linguine
  • 1 lb Ground turkey
  • 1 tbsp Lemon zest
  • 2 tbsp Lemon juice
  • 4 Garlic cloves
  • 3 tbsp Fresh parsley
  • 1 Egg
  • 0.5 cup Breadcrumbs
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 3 tbsp Olive oil
  • 1.5 lb Cherry tomatoes
  • 0.25 cup Basil leaves
  • 0.25 cup Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente, then drain and set aside, reserving 1/2 cup of the pasta water.

Step 2

In a large bowl, combine the ground turkey, lemon zest, lemon juice, 2 minced garlic cloves, 2 tablespoons of chopped parsley, the egg, breadcrumbs, salt, and black pepper. Mix until well combined and form the mixture into small patties, about 2 inches in diameter.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the turkey patties and cook for 4-5 minutes per side until golden brown and cooked through. Transfer the patties to a plate and keep warm.

Step 4

In the same skillet, add an additional tablespoon of olive oil. Mince the remaining 2 garlic cloves and sauté them over medium heat for about 30 seconds until fragrant.

Halve the cherry tomatoes and add them to the skillet. Cook for 5 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.

Add the reserved pasta water to the skillet and stir to create a light sauce. Season with a pinch of salt and pepper, then stir in the chopped basil leaves.

Add the cooked linguine to the skillet and toss to coat the pasta in the tomato sauce. Adjust seasonings as needed.

Step 8

Serve the linguine topped with the lemony turkey patties. Garnish with the remaining parsley and freshly grated Parmesan cheese. Enjoy!
