Ingredients

  • 12 oz linguine pasta
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 lemons, zest and juice
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 0.25 tsp red pepper flakes
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta, then set both aside.

Step 2

In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden, being careful not to burn it.

Step 3

Add the lemon zest, lemon juice, and red pepper flakes to the skillet. Stir well, then lower the heat to medium-low.

Step 4

Add the drained linguine to the skillet and toss to coat the pasta in the lemon garlic sauce. Gradually add the reserved pasta water, 1-2 tablespoons at a time, to loosen the sauce and help coat the pasta evenly. Use as much of the reserved pasta water as needed for your desired consistency.

Step 5

Stir in the grated Parmesan cheese until melted and evenly distributed. Season with salt and black pepper to taste.

Step 6

Remove the skillet from heat and sprinkle the chopped parsley over the pasta. Toss lightly to combine.
