  • 400 grams linguine pasta
  • 4 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons lemon zest
  • 3 tablespoons lemon juice
  • 50 grams grated Parmesan cheese
  • 2 cloves garlic, minced
  • 0.25 teaspoons red pepper flakes
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, freshly ground
  • 120 milliliters pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook until al dente according to the package instructions. Reserve 120 milliliters of the pasta cooking water and then drain the pasta.

Step 2

In a large skillet, melt the butter with the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Add the red pepper flakes to the skillet and stir for 30 seconds. Then, add the lemon zest and lemon juice, and cook for another minute.

Step 4

Lower the heat and stir in the reserved pasta cooking water. Simmer for 1-2 minutes to create a light sauce.

Add the cooked linguine to the skillet and toss well to coat the pasta in the sauce. Gradually stir in the grated Parmesan cheese, allowing it to melt and incorporate into the sauce.
