Ingredients

  • 12 oz linguine
  • 8 oz green beans
  • 2 tbsp extra virgin olive oil

  • 2 tbsp fresh lemon juice
  • 4 oz goat cheese (soft, crumbled)
  • 1 cup reserved pasta water
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tbsp chopped fresh basil (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions, stirring occasionally. Reserve 1 cup of pasta water before draining, and set the drained pasta aside.

Step 2

While the pasta is cooking, trim the ends of the green beans and cut them into 1-inch pieces.

Step 3

In the same pot of boiling water, blanch the green beans for about 4-5 minutes, or until they're tender but still slightly crisp. Remove them with a slotted spoon and transfer to a bowl of ice water to stop the cooking process, then drain and set aside.

In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden.
