Ingredients

  • 400 grams Linguine pasta
  • 60 milliliters Extra virgin olive oil
  • 4 whole Garlic cloves
  • 1 teaspoon Red pepper flakes
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 50 grams Grated Parmesan cheese (optional)
  • 120 milliliters Pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 120 milliliters (½ cup) of pasta water before draining.

Step 2

While the pasta is cooking, peel and thinly slice the garlic cloves.

Step 3

In a large skillet or frying pan, heat the olive oil over medium heat. Add the sliced garlic and sauté gently, stirring often, for 2-3 minutes until fragrant and golden. Be careful not to burn the garlic.

Step 4

Stir in the red pepper flakes and cook for an additional 30 seconds to release their flavor.

Step 5

Lower the heat to medium-low and add the drained linguine to the skillet. Toss to coat the pasta evenly with the garlic and oil mixture.

Step 6

Slowly pour in the reserved pasta water, a little at a time, stirring to create a light sauce that clings to the pasta.

Step 7

Season with salt and freshly ground black pepper to taste. Sprinkle the chopped parsley over the pasta and toss gently to combine.

Step 8

Serve immediately, garnished with additional parsley and grated Parmesan cheese if desired.
