Ingredients

  • 12 oz linguine
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 unit garlic cloves, minced
  • 1 unit shallot, finely chopped
  • 1 tsp red pepper flakes
  • 1 cup white wine
  • 1.5 cups cherry or grape tomatoes, halved
  • 2 lbs fresh clams (littleneck or manila), scrubbed
  • 0.25 cup fresh parsley, chopped
  • 2 tbsp fresh lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat the olive oil and butter over medium heat until the butter has melted.

Step 3

Add the minced garlic, chopped shallot, and red pepper flakes. Sauté for 1-2 minutes or until fragrant, being careful not to burn the garlic.

Pour in the white wine and stir to deglaze the pan, scraping any bits from the bottom. Increase the heat to medium-high and let the wine simmer for 2-3 minutes to reduce slightly.
