Ingredients

  • 12 ounces linguine pasta
  • 2 pounds clams (fresh, cleaned)
  • 4 slices bacon (thick-cut, diced)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1.5 cups cherry tomatoes (halved)
  • 0.5 cup dry white wine
  • 0.5 teaspoon red chili flakes
  • 0.25 cup fresh parsley (chopped)
  • 1 teaspoon lemon zest
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook linguine according to package instructions until al dente. Reserve 1/2 cup of the pasta water and drain the rest.

Step 2

Meanwhile, in a large skillet, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and place on a paper towel-lined plate. Leave 2 tablespoons of the rendered bacon fat in the skillet and discard the rest.

Add olive oil to the skillet with the bacon fat and heat over medium. Add minced garlic and sauté for 1 minute until fragrant.

Stir in cherry tomatoes and cook for 3-4 minutes until they soften and release their juices.
