Ingredients

  • 12 oz Linguine pasta
  • 1 lb Chicken breast, boneless and skinless
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 0.5 cup Peanut butter, creamy
  • 3 tbsp Soy sauce
  • 2 tbsp Rice vinegar
  • 2 tbsp Honey
  • 1 tsp Sesame oil
  • 0.5 cup Chicken broth
  • 0.5 tsp Ground ginger
  • 0.25 tsp Red pepper flakes (optional)
  • 2 stalks Green onions, chopped
  • 0.25 cup Roasted peanuts, chopped
  • 2 tbsp Fresh cilantro, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

Season the chicken breast with 1/2 tsp of salt and 1/4 tsp of black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes per side, or until fully cooked. Remove the chicken from the skillet and let it rest for 5 minutes. Cut into thin slices or bite-sized pieces and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic until fragrant, about 1 minute.

Step 5

Lower the heat and whisk in the peanut butter, soy sauce, rice vinegar, honey, sesame oil, chicken broth, ground ginger, and red pepper flakes (if using). Stir until the sauce is smooth and well combined. If needed, add a splash of the reserved pasta water to thin out the sauce to your desired consistency.

Step 6

Add the cooked linguine and sliced chicken to the skillet. Toss to coat everything evenly with the peanut sauce.

Step 7

Once everything is heated through, remove from heat. Garnish with chopped green onions, roasted peanuts, and fresh cilantro (if desired).
