Ingredients

  • 400 grams Linguine
  • 200 grams Bacon (chopped)
  • 100 grams Sun-dried tomatoes (chopped)
  • 250 ml Heavy cream
  • 3 units Garlic cloves (minced)
  • 50 grams Parmesan cheese (grated)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper (freshly ground)
  • 2 tablespoons Fresh parsley (chopped)
  • 4 liters Water (for boiling pasta)

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 1 teaspoon of salt once boiling.

Step 2

Cook the linguine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 3

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the chopped bacon to the skillet and cook until crispy, about 5 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.

Lower the heat to medium-low and pour in the heavy cream. Stir well to combine.
