Ingredients

  • 12 oz Linguine
  • 6 slices Bacon (thick-cut)
  • 1 large Yellow Onion
  • 2 tbsp Olive Oil
  • 2 whole Garlic Cloves
  • 0.5 tsp Crushed Red Pepper Flakes
  • 1 tsp Salt
  • 0.5 tsp Black Pepper (freshly ground)
  • 0.5 cup Pecorino Romano Cheese (grated)
  • 2 tbsp Fresh Parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water and drain the pasta.

Step 2

While the pasta cooks, cut the bacon into small pieces and slice the onion into thin strips.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the bacon and cook, stirring occasionally, until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside.

Step 4

In the same skillet, add the sliced onions to the bacon fat. Cook over medium heat, stirring occasionally, until the onions are soft and golden brown, about 7-10 minutes.

Step 5

Add the garlic cloves to the skillet and cook for 1 minute, until fragrant. Remove the garlic and discard it.

Stir in the crushed red pepper flakes. Return the cooked bacon to the skillet and mix well.
