Ingredients

  • 400 grams linguine
  • 200 grams bacon
  • 1 large yellow onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 50 grams parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley
  • 0.25 teaspoon red pepper flakes
  • 1 cup pasta water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

Step 2

While the pasta cooks, dice the bacon into small pieces. Peel and thinly slice the onion into half-moons. Mince the garlic.

Step 3

Heat a large skillet over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside, leaving the rendered fat in the skillet.

Step 4

Add the olive oil to the skillet along with the sliced onions. Cook the onions over medium heat until soft and caramelized, about 8-10 minutes. Stir occasionally to prevent burning.
