Ingredients

  • 12 oz linguine pasta
  • 14 oz artichoke hearts (jarred or canned, drained)
  • 1 cup walnuts
  • 3 garlic cloves
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 cup Parmesan cheese (grated)
  • 0.5 cup heavy cream
  • 0.25 cup fresh basil leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add linguine and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

In a food processor, combine the artichoke hearts, walnuts, garlic cloves, lemon juice, and fresh basil leaves. Pulse until the mixture is finely chopped but not completely smooth.

Step 3

Heat olive oil in a large skillet over medium heat. Add the artichoke-walnut mixture and cook for 2-3 minutes, stirring occasionally to release the flavors.

Step 4

Stir in the heavy cream and grated Parmesan cheese. Mix well and let the sauce simmer for 3-4 minutes, until slightly thickened.

Step 5

Season the sauce with salt and black pepper, adjusting to taste.

Step 6

Add the drained linguine to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.

Step 7

Serve the linguine hot, garnished with additional Parmesan cheese and fresh basil leaves if desired. Enjoy!
