Ingredients

  • 400 g linguine
  • 100 g blanched almonds
  • 60 g fresh basil leaves
  • 2 pieces garlic cloves
  • 50 g freshly grated Parmesan cheese
  • 120 ml extra virgin olive oil
  • 200 g canned white beans (such as cannellini or great northern beans), drained and rinsed
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 120 ml reserved pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 120 ml of the pasta cooking water, then drain the pasta and set it aside.

Step 2

While the pasta is cooking, make the almond pesto. In a food processor, combine the blanched almonds, fresh basil leaves, garlic cloves, Parmesan cheese, 60 ml of olive oil, lemon juice, salt, and black pepper. Blend until smooth, adding more oil if necessary to reach your desired consistency.

Step 3

In a large pan, heat the remaining 60 ml of olive oil over medium heat. Add the drained and rinsed white beans and sauté for 2-3 minutes until warmed through.

Step 4

Reduce the heat to low and add the cooked linguine to the pan with the beans. Pour the almond pesto over the pasta and toss to coat evenly.

Step 5

If the mixture is too thick, gradually add the reserved pasta cooking water, one tablespoon at a time, until the sauce reaches your desired consistency.

Adjust the seasoning with additional salt and pepper if needed. Serve immediately, garnished with extra Parmesan cheese and fresh basil leaves if desired.
