Ingredients

  • 12 oz linguine pasta
  • 2 medium zucchini
  • 2 tbsp olive oil

  • 2 minced garlic cloves
  • 3 4 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup (chopped) fresh basil
  • 1 tsp lemon zest

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

While the pasta cooks, prepare the zucchini. Slice the zucchini into thin rounds and then cut the rounds into quarters for smaller pieces.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes, or until softened and translucent.
