Ingredients

  • 400 grams linguine pasta
  • 200 grams cherry tomatoes
  • 1 large cucumber
  • 1 large red bell pepper
  • 1 small red onion
  • 100 grams black olives
  • 20 grams fresh parsley
  • 60 ml olive oil
  • 30 ml lemon juice
  • 15 ml red wine vinegar
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguine pasta according to the package instructions until al dente. Drain the pasta, rinse it under cold water to stop the cooking process, and set aside.

Step 2

While the pasta is cooking, chop the cherry tomatoes in half, dice the cucumber, and dice the red bell pepper into small pieces. Thinly slice the red onion and roughly chop the black olives and fresh parsley.

Step 3

In a small bowl, prepare the dressing by whisking together the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and black pepper until well combined.
