  • 12 oz linguine pasta
  • 2 medium zucchini
  • 3 tbsp olive oil
  • 4 cloves garlic

  • 1 lemon
  • 0.5 cup Parmesan cheese
  • 6 fresh basil leaves
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

While the pasta cooks, wash the zucchini and use a vegetable peeler or mandoline to create long ribbons. Set aside.

In a large skillet, heat the olive oil over medium heat. Mince the garlic and add it to the skillet. Sauté for 1-2 minutes or until fragrant, being careful not to burn the garlic.
