Ingredients

  • 200 g All-purpose flour
  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground cardamom
  • 150 g Unsalted butter, softened
  • 150 g Granulated sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 120 ml Sour cream
  • 150 g Lingonberries (fresh or frozen)
  • 20 g Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 20cm (8-inch) round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and ground cardamom. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together using a hand or stand mixer until light and fluffy, about 3-4 minutes.

Add the eggs, one at a time, and beat well after each addition. Mix in the vanilla extract.

Reduce the mixer speed to low and add the flour mixture in three additions, alternating with the sour cream in two additions, starting and ending with the flour mixture. Mix until just combined.
