  • 4 pounds boneless leg of lamb

  • 2 lemon, zested and juiced
  • 3 tablespoons olive oil
  • 1 cup chicken broth
  • 0.5 cup dry white wine
  • 1 yellow onion, sliced
  • 1.5 pounds baby potatoes
  • 4 carrots, cut into large pieces

Directions

Step 1

Pat the lamb dry with paper towels and season it all over with kosher salt and black pepper.

Step 2

In a small bowl, combine minced garlic, rosemary, thyme, lemon zest, and 2 tablespoons of olive oil to make a paste.

Rub the paste evenly over the surface of the lamb, ensuring all sides are well coated.
