  • 8 pieces Corn or flour tortillas
  • 1 medium Red onion, finely diced
  • 2 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 100 grams Sweet corn kernels
  • 1 large Avocado, sliced
  • 1 large Lime, cut into wedges
  • 2 tablespoons Fresh cilantro (coriander), chopped
  • 100 grams Vegan sour cream (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the finely diced red onion and cook for 2-3 minutes until softened.

Step 3

Stir in the minced garlic and diced red bell pepper. Sauté for another 3-4 minutes until the vegetables are tender.
