Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 cup Sour cream
  • 0.25 cup Milk
  • 1.5 cups Shredded cheddar cheese
  • 4 slices Cooked bacon, crumbled
  • 2 tablespoons Chives, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Scrub the potatoes clean under running water and pat them dry.

Step 3

Pierce each potato several times with a fork, then rub them with olive oil and place them on a baking sheet.

Step 4

Bake the potatoes in the preheated oven for 50-60 minutes, or until tender. A fork should easily pierce through the flesh.

Step 5

Remove the potatoes from the oven and allow them to cool for about 10 minutes until they are comfortable to handle.

Cut each potato in half lengthwise and carefully scoop out the flesh, leaving a thin layer of potato intact to keep the skin sturdy. Place the scooped-out flesh into a large mixing bowl.

Add the butter, sour cream, milk, 1 cup of shredded cheddar cheese, salt, and black pepper to the bowl with the potato flesh. Mash the mixture until smooth and well combined.

Fold in half of the crumbled bacon and half of the chopped chives into the mashed potato mixture.

Spoon the mashed potato mixture back into the potato skins, mounding it slightly.

Sprinkle the remaining shredded cheddar cheese evenly over the tops of the filled potato skins.

Return the stuffed potatoes to the baking sheet and bake at 400°F (200°C) for an additional 15 minutes, or until the cheese is melted and bubbly.

Remove the potatoes from the oven and garnish with the remaining crumbled bacon and chopped chives.
