Ingredients

  • 1 cup Rice vinegar
  • 1 cup Granulated sugar
  • 0.5 cup Water
  • 4 cloves Garlic
  • 1.5 teaspoons Red chili flakes
  • 2 tablespoons Fish sauce
  • 2 tablespoons Ketchup
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

Peel and finely mince the garlic cloves. Set aside.

Step 2

In a medium saucepan, combine rice vinegar, granulated sugar, and 1/2 cup of water. Stir to dissolve the sugar.

Step 3

Add the minced garlic, red chili flakes, fish sauce, and ketchup to the saucepan. Mix well to combine all the ingredients and place the saucepan over medium heat.

Step 4

Bring the mixture to a gentle boil, stirring occasionally to ensure the sugar doesn’t scorch at the bottom. Reduce the heat to low and simmer for 5 minutes to allow the flavors to meld.

Step 5

In a small bowl, whisk together the cornstarch and cold water until smooth, ensuring no lumps remain.

Step 6

Gradually pour the cornstarch slurry into the simmering sauce while stirring continuously. Continue cooking for another 2–3 minutes until the sauce thickens to your desired consistency.

Step 7

Remove the saucepan from the heat and allow the sauce to cool to room temperature. The sauce will continue to thicken slightly as it cools.

Step 8

Transfer the sauce to an airtight container or a jar, then refrigerate until ready to serve. The sauce can be stored in the refrigerator for up to 2 weeks.

Step 9

Serve as a dipping sauce alongside egg rolls, sushi, or your favorite appetizers.
