Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.5 teaspoon salt
  • 4 tablespoons cold water
  • 2 medium-sized sweet potatoes
  • 0.5 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup pecans
  • 1 egg
  • 1 tablespoon water

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

Step 3

Gradually add cold water, 1 tablespoon at a time, mixing just until the dough holds together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 20 minutes.

Step 4

While the dough chills, peel and cube the sweet potatoes. Boil in a pot of water until fork-tender, about 15 minutes. Drain and mash until smooth.

Step 5

In a medium bowl, combine the mashed sweet potatoes, brown sugar, cinnamon, nutmeg, heavy cream, and vanilla extract. Stir until well combined and set aside.

Step 6

Chop the pecans into small pieces and set aside.

Step 7

Roll out the chilled dough on a floured surface into a large rectangle, about 1/8 inch thick. Cut into 6-inch squares.

Step 8

Place a spoonful of the sweet potato mixture in the center of each square and sprinkle with chopped pecans.

Step 9

Fold each square diagonally to form a triangle, pressing the edges together to seal. Use a fork to crimp the edges for decoration.

Step 10

In a small bowl, whisk together the egg and 1 tablespoon of water to create an egg wash. Brush the tops of each triangle with the egg wash.

Step 11

Place the triangles on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.

Step 12

Allow to cool slightly before serving. Enjoy your Linda's Sweet Potato Pecan Triangles!
