Ingredients

  • 4 pieces Bone-in pork chops (thick cut, at least 1.5 inches)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1.5 cups Dry breadcrumbs
  • 0.5 cups Grated Parmesan cheese
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh sage (chopped)
  • 0.5 cups Chicken broth
  • 2 tablespoons Unsalted butter
  • 1 small Onion (finely chopped)
  • 2 cloves Garlic cloves (minced)
  • 4 pieces Cooking twine or toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a sharp knife, slice a deep pocket into the side of each pork chop, making sure not to cut all the way through. Set the chops aside.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook for 3-4 minutes, or until softened. Add the minced garlic and cook for another 1-2 minutes.

Step 4

In a mixing bowl, combine the cooked onion and garlic, breadcrumbs, Parmesan cheese, parsley, sage, and chicken broth. Mix until the stuffing is moistened and well-combined.

Step 5

Spoon the stuffing mixture into the pocket of each pork chop, packing it gently but firmly. Secure the openings with cooking twine or toothpicks to keep the stuffing in place.

Step 6

Rub each stuffed pork chop with the remaining olive oil, then season both sides of the chops with salt, pepper, and garlic powder.

Step 7

Heat a large oven-safe skillet over medium-high heat. Add the stuffed chops and sear for 2-3 minutes on each side, until golden brown.

Step 8

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 9

Remove the skillet from the oven and let the pork chops rest for 5 minutes. Remove toothpicks or twine before serving.

Step 10

Serve the stuffed pork chops warm with your choice of sides, such as roasted vegetables or mashed potatoes.
