Ingredients

  • 4 pieces Haddock or flounder fillets
  • 1 cup Lump crab meat
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Parsley, freshly chopped
  • 1 tablespoon Parsley, for garnish (optional)
  • 2 tablespoons Lemon juice, freshly squeezed
  • 0.25 cup Butter, melted
  • 1 small Shallot, finely diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup White wine
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or non-stick spray and set aside.

Step 2

In a large mixing bowl, combine the lump crab meat, breadcrumbs, chopped parsley, 1 tablespoon of lemon juice, melted butter, diced shallot, minced garlic, paprika, salt, and black pepper. Mix until well combined to create the stuffing.

Lay each haddock or flounder fillet flat on a clean work surface. Spoon an equal amount of the stuffing mixture onto one side of each fillet.
