Ingredients

  • 1 head Green cabbage
  • 1.5 pounds Ground beef
  • 1 cup Cooked white rice
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 0.25 cup, chopped Parsley
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 large Egg
  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1.5 cups Chicken broth
  • 2 tablespoons Brown sugar
  • 2 tablespoons Lemon juice

Directions

Step 1

Bring a large pot of water to a boil. Core the cabbage and carefully peel off the outer leaves. Blanch the cabbage leaves in the boiling water for 2-3 minutes, until softened. Remove and set aside to cool.

Step 2

In a large bowl, mix together the ground beef, cooked rice, chopped onion, minced garlic, parsley, salt, black pepper, and egg until thoroughly combined.

Step 3

Place about 1/4 cup of the beef mixture onto a cabbage leaf. Fold the sides in and roll tightly, securing the filling. Repeat with the remaining cabbage leaves and filling.

Step 4

In a separate bowl, mix the crushed tomatoes, tomato paste, chicken broth, brown sugar, and lemon juice to create the sauce.

Step 5

In a large pot or Dutch oven, spread a thin layer of the sauce on the bottom. Arrange the stuffed cabbage rolls seam-side down in a single layer. If necessary, create a second layer.

Step 6

Pour the remaining tomato sauce over the cabbage rolls, ensuring all are well-covered. Bring the pot to a gentle simmer over medium heat.

Step 7

Cover and cook on low heat for 1.5 hours, basting occasionally with the sauce.

Step 8

Serve hot, garnished with additional chopped parsley if desired.
