Ingredients

  • 12 oz spaghetti
  • 3 tbsp olive oil
  • 3 whole garlic cloves
  • 2 cups cherry tomatoes
  • 4 cups fresh spinach
  • 1 whole lemon
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Thinly slice the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant and lightly golden.

Add the cherry tomatoes to the skillet and cook for 4-5 minutes, stirring occasionally, until they start to burst and release their juices.
