Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 large eggs
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • 1 medium jalapeño, finely diced
  • 1 teaspoon red chili flakes
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons hot sauce
  • 0.5 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, diced onion, minced garlic, diced jalapeño, red chili flakes, smoked paprika, black pepper, and salt. Mix gently with your hands or a wooden spoon until just combined. Do not overmix to avoid a dense meatloaf.

Step 3

Transfer the meat mixture to the prepared loaf pan and press it down gently to shape it into an even loaf.

Step 4

In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and hot sauce to make the glaze.

Step 5

Spread half of the glaze evenly over the top of the meatloaf with a spoon or spatula.

Step 6

Place the loaf pan in the preheated oven and bake for 45 minutes. Remove the meatloaf from the oven and spread the remaining glaze over the top.

Step 7

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Remove the meatloaf from the oven and let it rest for 10 minutes in the pan before slicing.

Step 9

Slice into thick pieces and serve hot with your favorite sides, such as mashed potatoes or steamed vegetables.
