Ingredients

  • 1 small head Red cabbage
  • 1 small head Green cabbage
  • 2 medium Carrot
  • 3 stalks Green onion
  • 0.5 cup, chopped Fresh parsley
  • 0.25 cup Apple cider vinegar
  • 0.25 cup Olive oil
  • 2 tablespoons Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons (optional, for garnish) Sesame seeds

Directions

Step 1

Remove the outer leaves of both cabbages and rinse thoroughly. Using a sharp knife or mandoline slicer, thinly slice the red and green cabbages into fine shreds. Place in a large salad bowl.

Step 2

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the cabbage mix.

Step 3

Finely chop the green onions and parsley. Add them to the salad bowl for added flavor and color.

Step 4

In a small bowl or jar, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper until the dressing is well combined and emulsified.

Step 5

Pour the dressing over the cabbage mixture and toss thoroughly to evenly coat all the vegetables.

Step 6

Optional: Sprinkle sesame seeds over the salad for a touch of crunch and added nuttiness.

Step 7

Let the salad rest for 10-15 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
