Ingredients

  • 1.5 cups graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 14 ounces sweetened condensed milk
  • 4 large egg yolks
  • 0.75 cup freshly squeezed lime juice
  • 1 tablespoon lime zest
  • 0.25 cup coconut milk
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 3 slices lime slices (for garnish, optional)
  • 2 tablespoons toasted coconut flakes (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is evenly moistened.

Step 3

Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish, forming a compact crust. Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Let it cool completely.

Step 4

In another bowl, whisk together the sweetened condensed milk, egg yolks, lime juice, lime zest, and coconut milk until smooth and well combined.

Step 5

Pour the lime filling into the cooled crust, spreading it evenly.

Step 6

Bake the pie at 350°F (175°C) for about 15 minutes, or until the filling is set but still slightly jiggly in the center.

Step 7

Remove the pie from the oven and allow it to cool to room temperature. Then refrigerate for at least 4 hours or overnight to chill and set completely.

Step 8

While the pie is chilling, prepare the whipped cream. In a cold mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

Step 9

Once the pie is chilled, spread or pipe the whipped cream over the top of the pie.

Step 10

Garnish with lime slices and toasted coconut flakes if desired.

Step 11

Slice and serve chilled. Enjoy Linda's Puerto Rican Lime Pie!
