Ingredients

  • 2 cups Dried Lima beans
  • 5 cups Water or broth
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 piece Bay leaf
  • 2 tablespoons, chopped (optional) Fresh parsley

Directions

Step 1

Rinse the dried Lima beans under cold running water and inspect for any debris. Set aside.

Step 2

Turn the pressure cooker to the sauté setting. Add olive oil and allow it to heat up.

Step 3

Add the diced onion and sauté for 3-4 minutes until softened. Then, add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Step 4

Stir in smoked paprika, salt, and black pepper. Allow the spices to bloom for about 30 seconds.

Step 5

Add the rinsed and drained Lima beans to the pressure cooker, followed by 5 cups of water or broth. Stir to combine.

Step 6

Drop in the bay leaf for added flavor.

Step 7

Seal the pressure cooker lid securely, ensuring the vent is set to the sealed position. Set the cooker to high pressure and cook for 30 minutes.

Step 8

Once the cooking time is complete, allow the pressure cooker to naturally release pressure for 15 minutes. Carefully release any remaining pressure manually by turning the venting knob.

Step 9

Discard the bay leaf, taste the beans, and adjust seasoning if needed with additional salt or pepper.

Step 10

Serve warm. Garnish with freshly chopped parsley for an optional pop of color and freshness.
