Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Butter
  • 8 ounces Cream cheese
  • 1 cup Sour cream
  • 2 cups Cheddar cheese (shredded)
  • 0.5 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Green onions (sliced)
  • 1.5 cups Ritz crackers (crushed)
  • 2 tablespoons Butter (melted)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

Peel and dice the potatoes into 1-inch chunks. Place them in a large pot, cover with water, and add a pinch of salt.

Step 3

Bring the pot to a boil over medium-high heat and cook the potatoes for 15-20 minutes, or until they are fork-tender. Drain the potatoes and return them to the pot.

Step 4

Add the butter, cream cheese, sour cream, milk, salt, pepper, and garlic powder to the potatoes. Using a potato masher or hand mixer, mash until the mixture is smooth and creamy.

Step 5

Fold in 1 cup of the shredded cheddar cheese and the sliced green onions.

Step 6

Transfer the potato mixture into the prepared baking dish and spread it out evenly.

Step 7

Sprinkle the remaining 1 cup of shredded cheddar cheese on top.

Step 8

In a small bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle the cracker mixture over the cheddar cheese layer.

Step 9

Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Step 10

Let the casserole rest for 5 minutes before serving. Garnish with additional green onions, if desired.
