Ingredients

  • 2 pounds ground beef
  • 1 medium yellow onion, finely chopped
  • 1 medium jalapeño, finely diced
  • 1 cup breadcrumbs
  • 0.25 cup whole milk
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 2 cloves minced garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup cilantro, finely chopped

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x5-inch loaf pan or line it with parchment paper for easier removal.

Step 2

In a large mixing bowl, combine the ground beef, chopped onion, diced jalapeño, breadcrumbs, milk, shredded cheddar cheese, eggs, and 1/2 cup of salsa.

Step 3

Sprinkle the ground cumin, smoked paprika, chili powder, minced garlic, salt, and black pepper over the mixture.

Step 4

Using clean hands, gently mix all the ingredients together until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 5

Fold in the chopped cilantro for a burst of fresh flavor.

Step 6

Transfer the meatloaf mixture into the prepared loaf pan, pressing it down gently to ensure it's evenly distributed.

Step 7

Spread the remaining 1/2 cup of salsa evenly over the top of the meatloaf to create a flavorful glaze.

Step 8

Place the loaf pan in the preheated oven and bake for approximately 60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 9

Once done, remove the meatloaf from the oven and let it rest in the pan for 10 minutes to allow the juices to settle.

Step 10

Carefully remove the meatloaf from the pan, slice it, and serve warm. Garnish with additional cilantro if desired.
