Ingredients

  • 1 lb Pork tenderloin
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 8 oz Button mushrooms, sliced
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Marsala wine
  • 1 cup Chicken or vegetable broth
  • 1 cup Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 8 oz Dried fettuccine pasta
  • 1 cup Mozzarella cheese, shredded
  • 2 tbsp Chopped fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Trim excess fat from the pork tenderloin and cut it into bite-size cubes.

Step 3

Heat olive oil in a large skillet over medium-high heat. Add the cubed pork and sear until browned on all sides, about 5-7 minutes. Remove the pork and set aside.

In the same skillet, add the minced garlic and sliced mushrooms. Sauté until the mushrooms are golden and softened, about 5 minutes. Season with salt and pepper.
