Ingredients

  • 2 cups shredded sweetened coconut
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 cups pineapple chunks (drained)
  • 1 cup mandarin oranges (drained)
  • 1 cup mixed berries (strawberries, blueberries, raspberries, or your choice)
  • 0.5 cup chopped pecans or walnuts (optional)
  • 1 cup mini marshmallows
  • 2 tablespoons butter (melted)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish with butter or cooking spray.

Step 2

In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir until well blended to form the macaroon mixture.

Step 3

In the greased baking dish, layer the pineapple chunks evenly as the bottom layer.

Step 4

Add a layer of mandarin oranges over the pineapple, followed by a layer of mixed berries.

Step 5

Sprinkle the chopped nuts over the fruit layers if desired, then evenly scatter the mini marshmallows on top.

Step 6

Drizzle the melted butter over the fruit and marshmallows.

Step 7

Using a spoon or spatula, drop dollops of the macaroon mixture over the top, spreading gently to mostly cover the fruit and marshmallow layers.

Step 8

Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and the edges are bubbly.

Step 9

Remove from the oven and let the casserole cool for 10 minutes before serving.

Step 10

Serve warm or at room temperature as-is or with a scoop of vanilla ice cream for an extra treat.
