Ingredients

  • 1 pound Italian sausage (ground, mild or spicy)
  • 3 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 2 large bell peppers (diced, any color)
  • 2 medium zucchini (sliced into half-moons)
  • 14.5 ounces crushed tomatoes (canned, unsweetened)
  • 1 tablespoon Italian seasoning
  • 0.5 teaspoons red pepper flakes (optional)
  • 1 cup ricotta cheese
  • 1.5 cups mozzarella cheese (shredded)
  • 0.5 cup parmesan cheese (grated)
  • 2 tablespoons fresh basil (chopped, optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Preheat oven to 375°F (190°C). Grease a 9x13-inch casserole dish with a light coat of olive oil or non-stick cooking spray.

Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once hot, add the ground Italian sausage and cook, breaking it up into small pieces, until browned and no longer pink (about 8-10 minutes).
