Ingredients

  • 16 pieces Large white button mushrooms
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 cup Italian seasoned breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Mozzarella cheese, shredded
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 tablespoons Butter, melted
  • 0.25 cup Chicken broth or vegetable broth (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms by wiping them with a damp paper towel. Carefully remove the stems and set the caps aside. Finely chop the stems.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and chopped mushroom stems, cooking for 3-4 minutes until softened. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, combine the cooked mushroom stems and garlic, parsley, breadcrumbs, Parmesan cheese, mozzarella cheese, salt, and black pepper. Stir well to incorporate all the ingredients.

Step 5

Add the melted butter to the mixture and stir until it reaches a moist but crumbly consistency. If the mixture seems too dry, add a small amount of chicken or vegetable broth until desired consistency is achieved.

Step 6

Brush the outside of the mushroom caps with the remaining 1 tablespoon of olive oil and arrange them on a baking sheet or in a baking dish, hollow-side up.

Step 7

Spoon the filling mixture generously into each mushroom cap, pressing lightly to ensure the filling is compact.

Step 8

Bake the mushrooms in the preheated oven for 20-25 minutes, or until the tops are golden brown and the mushrooms are tender.

Step 9

Remove from the oven and let cool slightly before serving. Garnish with additional parsley, if desired.

Step 10

Serve warm and enjoy!
